Looking for something delicious, healthy and fast as a Mother’s Day treat? Showing you care doesn’t have to be complicated.

A yogurt parfait is a great option. It’s pretty to look at, easy to make and packed with wholesome ingredients. The recipe takes only a few steps after removing the yogurt from the fridge.

It also is a healthy option for your mother. Recent research found that women who eat five or more servings of yogurt a week have a lower risk of developing high blood pressure.

Be sure and use low-fat or fat-free plain Greek yogurt for extra creaminess.

For those who want a little crunch in their parfait, try using roasted, sliced almonds, said Penny Kris-Etherton, Ph.D., R.D., a nutrition professor at Penn State University. Granola can also add crunch, but Kris-Etherton cautions to keep that to a sprinkle since it is often loaded with calories and added sugars.

Greek Yogurt Parfait with Fresh Berries and Roasted Almonds

1 cup low-fat or fat-free plain Greek yogurt

1/3 cup fresh raspberries

2 Tbsp. sliced, roasted almonds

½ cup fresh berries

(Optional) ½ tsp. sugar substitute

Step 1: Mash raspberries until juicy. Add optional sugar substitute if needed.

Step 2: Add a few tablespoons of yogurt in the base of a tall wine or champagne glass.

Step 3: Sprinkle berries and roasted almonds on top of the yogurt.

Step 4: Dribble mashed raspberry sauce on top of the berries. Make sure the sauce meets the side of the glass to create a solid layer of color for the parfait.

Step 5: Repeat the layering with yogurt, fruit, nuts and sauce until the glass is full. Top with leftover berries and nuts.

Serve to Mom with love.
